Miso and Sriracha Butter Beans



Ingredients

For beans

1 tablespoon of oil

1 small shallot finely chopped

1 medium garlic clove crushed

Handful of spinach leaves

1/2 can of butter beans

Salt to taste

Yoghurt (to add on top)


For the sauce

1 tablespoon of white miso paste

1 tablespoon of tahini

1 teaspoon of soy sauce

1 tablespoon of maple syrup

1-2 teaspoons of sriracha sauce (add more or less depending on taste)

1 tablespoon lime juice

2-3 tablespoons of water


Steps

1. Add the ingredients for the bowl and mix well till fully combined

2. Fry the onion in the oil until soft and then add the garlic and fry for another minute or so.

3. Add the butter beans and cook for a couple of minutes

4. Add the sauce and cook for a few minutes until the sauce turns glossy and has coated all the beans.

5. Add salt if using

6. Add the spinach and cook till wilted

7. Remove from heat and serve with yoghurt and toast!
