Ingredients
¼ cup all purpose flour
½ cup rice flour
¼ teaspoon salt
1 cup kimchi with kimchi liquid set aside
½ to ¾ cup water
2-3 tablespoons vegetable oil
1-2 tablespoons of green onions spring onions (for garnish)
Sesame seeds ( for garnish)
Instructions
1. Make up approximately ¾ liquid using the kimchi liquid and water and set aside
2. Mix together the all purpose flour, rice flour and salt in a bowl
3. Add the kimchi liquid + water to the dry ingredients and mix well
4. Add the kimchi to the mix and stir until fully integrated
5. Add oil to pan and bring to medium to high heat
6. Take approximately ¼ cup of the pancake batter and drop onto the pan, use a spoon to spread the mixture round if required.
7. Let the pancake cook for 2-3 minutes on each side (or until slightly browned), adding more oil if necessary.
To serve, garnish with spring onions and sesame seeds (optional add a poached egg on top)
