Chai Spiced Granola

Having recently discovered how quick and easy it is to make your own granola, I don't think I will be going back to store bought granola again! You can add your own ingredients and flavour. My personal favourite is this chai spiced granola which tastes great with some milk and fruits like banana or pear.

Ingredients
1.5 cups of oats
1/4 cup almond or cashew butter
4 tablespoons maple syrup
2 tablespoons coconut oil
1.5-2 teaspoons cinnamon
1 teaspoon ground ginger
1 teaspoon ground cardamom
1/4 teaspoon nutmeg
1/4 cup chia seeds
1/2 cup coconut flakes
1/2 cup nuts of your choice (I used mix of cashews and almonds)
Steps
Preheat the oven to 160 C and line a baking tray with cooking paper.
In a large bowl whisk the nut butter, maple syrup and coconut oil until fully combined.
Add the cinnamon, ginger, cardamom and nutmeg to the bowl and mix well.
Add the oats, coconut flakes, chia seeds and nuts and mix until these dry ingredients are fully coated.
Transfer the mixture to the baking tray and spread out into an even layer.
Place in the oven and bake for 20 mins until the granola has browned.
Remove from the oven and let the granola cool.
Break into clumps and enjoy with milk or yoghurt!
